SPRING NEWS: NEW MENU, GREAT RETURN OF THE “SPEZIAL PIZZA” AND “ICONIC EASY LUNCH”

Divinity is a charming gastronomic oasis in the heart of the Eternal City. Framed by the rooftop of The Pantheon Iconic Rome Hotel, the magnificent dome of the Pantheon and the elegance of Sant’Ivo alla Sapienza, make it a magical place to satisfy all the senses.

Divinity is an authentic Food Lab where research meets creative flair, food becomes art, and culinary innovation is the order of the day. It is the ideal meeting place for convivial moments, from business meetings to evenings with friends; the culinary offering, designed to satisfy every moment of consumption throughout the day, harmoniously blends with mixology ranging from traditional cocktails to signature drinks, crafted by Bar Manager Matteo Fatica, perfect for pairing with gourmet tapas.

The kitchen team, led by Chef Luca Decembrino, under the supervision of Chef Francesco Apreda, who has “signed” the culinary concept, offers a wide selection of dishes ranging from the most iconic interpretations of Italian tradition to creative variations. In the new menu – available from March 23 – stand out spaghetti in white, bottarga, and finger lime, burrata for sharing, goji berries, and capers, shrimp tartare alla nizzarda; and also stir-fried cuttlefish with vegetables, coconut sauce, and spices or breaded lamb ribs, carrots, and agretti. With the arrival of spring, there is also the great return of the “spezial” pizza: a Neapolitan pizza, but with a slight crispiness reminiscent of Roman pinsa, a fusion of Naples and Rome that mixes traditional flavors with a selection of sweet and well-balanced spices for an oriental touch.

Another important novelty is “Iconic Easy Lunch” a formula dedicated to lunchtime that includes 4 set menus each with two dishes: “Santa Chiara” with buffalo mozzarella at 38°, romaine lettuce kimchi, and kamut fettuccine with seafood puttanesca (€35 per person); “Eustachio” with aromatic mixed greens, avocado, and grilled pineapple, roasted catch of the day, friggitelli peppers, and potato and mussel sauce (€45 per person), “Pigna” with amberjack carpaccio, basil and sesame pesto along with eggplant tagliolini, ginger, and black olives; “Signature” with golden Amatriciana rigatoncini and tandoori chicken and red peppers.

The Divinity offering is comprehensive and versatile, capable of satisfying every need and desire. A place of sharing and discovery with all-day dining service, from breakfast to after-dinner.

An extensive wine list is essential, drawing from Italian terroirs with a special focus on national and international “bubbles”.
